Bacon-and-Egg Sandwich



1 egg
Pinch of dried oregano & pepper
2 slices Canadian bacon
1 English muffin, toasted
2 slices tomato

1. Beat 1 egg with dried oregano and black pepper to taste. Pour into a microwave-safe bowl coated with nonstick cooking spray and microwave on high 1 minute.
2. Top with 2 slices cooked Canadian bacon and microwave 20 seconds more.
3. Top half of a toasted English muffin with egg, bacon, 2 tomato slices, and remaining muffin half.

Yield: 1 serving / 300 calories.
