Pepperoni Minestrone Soup
7 cups beef broth
2 cups coarsely chopped cabbage
1 can Italian stewed tomatoes
1 medium onion, sliced
1 carrot, sliced
1 Tbsp. dried Italian seasonings
1 pkg. frozen Italian green beans
1 large zucchini, sliced
1/2 cup dried bow-tie pasta
1 1/2 cup pepperoni chunks
1 cup kidney beans, drained
garlic, salt and pepper to taste
grated Parmesan cheese
1. Combine the first 7 ingredients in a large kettle. Bring to a boil. Reduce heat and simmer for 20 minutes.

Add in the green beans, zucchini and pasta. Simmer for an additional 15 minutes. Stir in the pepperoni and kidney beans. Heat through. Season with salt & pepper.

Sprinkle grated cheese over the bowls of soup just before serving.
