Beef and Mushroom Stir-Fry
2 teaspoons olive oil
1 package (8 ounces) sliced mushrooms
1 medium red pepper, thinly sliced
1 bunch green onions, sliced
1 beef sirloin steak (about 1 pound), well trimmed, thinly sliced
2 garlic cloves, crushed with garlic press
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
1/2 cup chicken broth
1 teaspoon cornstarch
1. In nonstick 12-inch skillet, heat olive oil over medium-high heat until hot. Add mushrooms, red pepper, and green onions, and cook about 8 minutes or until vegetables are tender and mushrooms are golden, stirring frequently. Transfer vegetables to bowl.
2. To same skillet, add steak, garlic, crushed red pepper, and salt, and cook, stirring quickly and constantly, about 3 minutes for medium-rare or until desired doneness.
3. In cup, mix broth and cornstarch. Return mushroom mixture to skillet. Add cornstarch mixture; heat to boiling, stirring constantly. Boil 1 minute.
