Golden Apple Cake



2 cups flour
1 3/4 cups sugar
1 teaspoon baking soda 1 teaspoon ground all spice
1/2 teaspoon salt
3 eggs, slightly beaten
1 cup oil
1 tablespoon vanilla
4 cups diced Golden Delicious apples
1 cup raisins(optional)
1 cup chopped pecans (optional)

Icing for cake:
¼ cup margarine or butter ( ½ stick)
½ cup brown sugar, firmly packed
1/3 cup fat-free evaporated milk
¼ cup chopped walnuts for garnish (optional)

1. Thoroughly stir flour, sugar, baking soda, allspice and salt with fork. Blend in eggs, oil and vanilla. Fold in remaining ingredients. Dough will be very stiff.
2. Spread into greased 13 X 9 X 2-inch baking pan. Bake at 350 degrees F. 50-60 minutes or until cake tests done when wooden pick is inserted near center. (Cut back to 40-45 minutes if not using raisins/nuts)
For the topping:
In a medium saucepan, melt butter or margarine over medium heat. Do not brown the butter. Stir in brown sugar and milk. Turn heat up to medium high and bring to a boil. Reduce heat to low and simmer gently for 5 minutes. Stirring occasionally. Pierce warm or cooled cake all over with a skewer or two-tined fork. Drizzle hot topping all over the cake. Garnish with chopped walnuts if desired. Cool for 30 minutes before serving.
