Garlic Parmesan Mashed Potatoes



3 lbs. Yellow/Gold Potatoes, peeled
6 whole garlic cloves, peeled
3/4 - 1 cup of half-and-half
3 tablespoons Parmesan cheese, grated
Salt to taste
Dash white pepper
Dash nutmeg

1. Cut potatoes in quarters.
2. Cook potatoes and garlic cloves in boiling, lightly salted water until a fork pierces them easily (about 20-25 minutes)
3. Gently heat half-and-half, either in a small saucepan or in the microwave.
4. Drain potatoes and garlic in a colander; return to pot. Add 3/4 cup warm half-and-half to potatoes and garlic. Mash thoroughly. (Add remaining 1/4 cup of half-and-half if the mixture seems to dry).
6. Add Parmesan cheese and mix thoroughly. Season to taste with salt, a dash of white pepper and a dash of nutmeg. Serve immediately.

Makes 6-8 servings.
