Broiled Lemon Pepper Fish
1-1/2 lb fish fillets (such as catfish or tilapia)
1/3 cup light mayonnaise
1 tbsp grated lemon rind
1/2 tsp cracked black pepper
1/4 tsp salt
Lemon wedges
1. Arrange fish in single layer on foil-lined rimmed baking sheet; set aside.
2. In bowl, stir together mayonnaise, lemon rind, pepper and salt; spread over fish.
Broil fish about 8 inches from heat until golden brown on top and fish flakes easily when tested, about 10 minutes. Serve with lemon wedges.
