Warm Spinach Parmesan Dip
In the southern United States, eating greens such as cabbage, collard greens, mustard greens, kale or spinach on New Year's Eve is said to bring wealth in the upcoming year.
2 tablespoons butter
2 tablespoons olive oil
1 med. onion, finely chopped
8 large garlic cloves, minced
2 tablespoons flour
1/2 cup chicken stock
1/2 cup whipping cream
10 ounces package fresh baby spinach leaves
1 cup grated Parmesan cheese
1/3 cup sour cream
1/2 teaspoons cayenne pepper
salt and pepper to taste

Melt butter with oil in large heavy skillet over medium heat. Add onion and garlic; saute until onion is tender, about 6 minutes. Stir in flour and cook for another 2 minutes.
2. Gradually whisk in stock and cream and bring to boil, whisking constantly. Cook until mixture thickens, stirring constantly, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne. Season with salt and pepper. Serve warm with toasted baguette slices or crackers.
Yield: 3 cups
