Smoked Turkey Roll-Ups



1/2 cup light mayonnaise
2 tbsp chopped fresh coriander
1 tbsp Dijon mustard
1 jalapeno pepper , seeded and minced
1/4 tsp salt
1/4 tsp pepper
4 large (10-inch/25 cm) whole wheat tortillas
1/2 cup thinly sliced red onions
8 oz thinly sliced smoked turkey

1. In bowl, combine mayonnaise, coriander, mustard, jalapeno pepper, salt and pepper.
2. Spread each tortilla with heaping 2 tbsp (25 mL) mayonnaise mixture; sprinkle with red onion. Arrange 3 slices turkey on each; roll up tightly. (Make-ahead: Wrap individually and refrigerate for up to 24 hours.) Cut into 3/4-inch pieces.

Yield: 24 servings.
