Pork Stew Mexican Style
1 lb Boneless pork loin trimmed
1 Medium onion, chopped
3/4 Sliced celery like sticks
2 Carrots sliced thin
2 Medium unpeeled potatoes cubed
1 can (7oz) diced green chiles
2 teaspoon Garlic
1 cup Fat free chicken broth
1 cup Water ( enough to cover)
2 tablespoons Cornstarch
1/4 cup Water
Salsa to taste

Cut pork into 1 1/2 inch cubes. In a 3 quart saucepan, mix pork with the veggies and chicken broth. Add water to cover. Cover pan and simmer about 45 minutes.

Mix cornstarch with remaining water, Add to stew and cook until bubbly.
Serve as is or topped with a spoonful of Salsa.
