Red Beans and Rice

 

Ingredients:

2 cups red beans

1/2 cup chopped sweet onion

1/2 cup shopped shallots

1/2 teaspoon minced garlic

1/4 cup butter

1/2 cup chopped ham

3 cups water

1 teaspoon salt

1/2 teaspoon black pepper

 

Method:

Soak beans in water to cover overnight. Drain. In a large saucepan sauté onion, shallots and garlic in butter until tender. Add ham and continue until lightly browned. Add drained kidney beans and remaining ingredients. Cook slowly over low heat 45 minutes to 1 hour, adding more hot water if needed. Serve with hot, fluffy rice.
