Parmesan Potatoes



1/2 cup butter, melted
1 teaspoon salt
1/2 teapoon pepper
6 medium (6 cups) baking potatoes, washed, unpeeled, cut into 1/8-inch slices
1/4 cup grated Parmesan cheese
1/4 cup finely chopped red bell pepper
2 tablespoons chopped fresh parsley

1. Heat oven to 350°F. Combine, butter, salt and pepper in large bowl. Add potatoes; toss to coat. Layer half of potatoes in ungreased 13x9-inch baking pan; sprinkle with half Parmesan cheese. Layer with remaining potatoes.
2. Cover with aluminum foil. Bake for 30 minutes. Uncover; sprinkle with remaining cheese. Continue baking, uncovered, for 20 to 30 minutes or until potatoes are crisply tender. Sprinkle with red pepper and parsley before serving.
