Grilled Garlic Lime Pork Tenderloin



6 large cloves garlic, chopped
2 Tbsps. soy sauce
2 Tbsps. fresh ginger root, grated
2 tsps. Dijon mustard
1/3 cup fresh lime juice
1/2 cup olive oil
1/8 tsp. cayenne, or to taste
6 pork tenderloin steaks

1. Blend first 7 ingredients with salt and pepper to taste in a blender or food processor. Combine pork with marinade in a large sealable plastic bag. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate pork in the refrigerator, turning occasionally, at least 1 day and up to 2 days.
2. Prepare grill. Remove pork from refrigerator and let stand at room temperature about 30 minutes before grilling. Remove pork from marinade, letting excess drip off, and grill 15-20 minutes on an oiled rack set 6 inches over glowing coals, turning every 5 minutes, until a meat thermometer registers 160°F.
