Micro-Grilled Potato Skewers



8 small red potatoes (about 1 lb)
2 tbsp chopped fresh basil (or 1/2 tsp dried)
1 tbsp vegetable oil
1/2 tsp each salt and pepper

1. Scrub potatoes and cut in half; place in microwaveable dish. Sprinkle with 2 tbsp water; cover and microwave at High until tender, about 8 minutes. Sprinkle with basil, oil, salt and pepper; stir to coat.
2. Thread potatoes onto skewers. Place on greased grill over medium-high heat; close lid and grill, turning occasionally, until crisp and golden, about 10 minutes.
