Low-Fat New Potato Salad
2 lbs. new potatoes
1/4 cup low-fat mayonnaise
1/4 cup nonfat sour cream
1 tablespoon coarse ground mustard
2 tablespoons parsley (minced)
1/8 teaspoon fresh ground black pepper
1.Steam potatoes for 30 minutes. Remove and let cool for about 10 minutes; chill thoroughly.
2. Cut into 1/2 to 1 inch pieces. Place in mixing bowl and add mayonnaise, sour cream, mustard, parsley, and pepper.
In addition: you can add any vegetables that are in the fridge to liven this up!
