Grilled Summer Vegetable Packets
8 carrots, sliced
8 small new_potatoes
4 small onions, chopped
2 tbsp vegetable oil
2 tbsp chopped fresh herbs (such as basil, oregano and parsley)
1/2 tsp each salt and pepper
1. Divide carrots, potatoes and onions between 2 large pieces of greased heavy-duty foil; sprinkle with oil, herbs, salt and pepper. Seal and place on grill over medium-high heat; close lid and cook, turning once, until tender, about 20 minutes.
