Black Bean Confetti Relish



2/3 cup canned black beans, rinsed and drained
2 tablespoons frozen whole-kernel corn
2 tablespoons diced yellow bell pepper
2 tablespoons diced plum tomato
1 tablespoon diced red bell pepper
1 tablespoon minced shallots
1 tablespoon lemon juice
1 teaspoon olive oil
1/4 teaspoon ground cumin
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon salt

1.Combine all the ingredients in a bowl. Serve relish chilled or at room temperature.
* Serve with corn chips, fish, poultry, or meat.
Yield: 1 cup
