Peach Muffins
1 1/2 cups all-purpose flour
1 cup sugar
3/4 teaspoon salt
1/8 teaspoon ground cinnamon
2 eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1 cup peeled and finely chopped peach

Preheat oven to 350 degrees. Combine the dry ingredients. In another bowl, combine the oil, eggs, and vanilla. Stir into dry ingredients, just until moistened.
2. Batter will be thick. Fold in peaches. Fill paper-lined muffin cups two-thirds full.
Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
