Shredded Brussels Sprouts with Bacon



2 pounds Brussels sprouts
6 slices bacon
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons water
3 cloves garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste

1. Trim the Brussels sprouts and remove any damaged leaves. Rinse them well, then shred them on a grater or in the food processor; set aside. In a large saucepan, cook bacon until crisp. Remove bacon from pan, crumble, and set aside. Remove all but 1 tablespoon bacon fat from the pan.
2. Return pan to heat and add olive oil and butter; heat over medium heat until melted. Add shredded Brussels sprouts and cook for 1-2 minutes. Add water and continue cooking, stirring frequently, until the veggies are tender, about 8-10 minutes. Add garlic and cook 1-2 minute longer until fragrant.
3. Remove pan from heat, sprinkle with lemon juice, salt, pepper, and reserved bacon, and serve.
