Summer Salad with Citrus Marinade



2 to 3 medium tomatoes, sliced
1 small green pepper; sliced into rings
1/3 cup olive oil
1/2 teaspoon grated lemon rind
1 1/2 tablespoons lemon juice
1 tablespoon chopped fresh chives
1/4 teaspoon sugar
1/8 teaspoon white pepper
lettuce leaves

1. Arrange tomato and green pepper in a shallow dish, set aside.
2. Combine olive oil and next 5 ingedients; pour over vegetables. Cover and marinate in refrigerator 45 minutes. Arrange on lettuce leaves
