Green Eggs and Ham



2 slices bread
2 eggs
3 drops green food coloring (more if needed)
salt and pepper
2 pieces ham

1. Separate the egg yolks from the whites and beat the whites in a bowl with food coloring, salt and pepper. (Add more food coloring until the eggs reach your desired shade of green) .
2. Using a juice glass or cookie cutter, cut a hole from the center of the bread slices. Lightly coat a pan with butter and heat it over medium heat. Put in the bread and the holes. As they fry, pour half of the egg white mixture into each hole, then top with the yolk.
3. When the egg is just set, after about 2 minutes, turn the bread slices and the holes. Cook on the other side for another 2 minutes or to desired degree of doneness. Heat another pan over medium heat and lightly brown ham. Serve, garnishing each egg with the fried bread hole, and a side of ham.
