Spicy Spinach & Artichoke Dip
1/2 cup butter or margarine
1 medium onion, chopped (1 cup)
2 (10oz.) pkgs. frozen chopped spinach, thawed and drained
1 (140z.) can artichoke hearts, drained and chopped
1 (8oz.) pkg. cream cheese
1 (8oz.) pkg. sour cream
1 cup shredded Monterey Jack cheese, divided
1 cup grated Parmesan cheese, divided
2 tbsp. hot pepper sauce
Corn chips or crackers
1 Melt butter in a large saucepan or skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in spinach, artichokes, cream cheese, sour cream, 3/4 cup Monteray Jack cheese, 3/4 cup Parmesan cheese and hot pepper sauce. Stir until well blended and heated through.
2 Pour mixture into a 1/2 quart casserole dish and top with remaining Monterey Jack and Parmesan cheeses. Bake in 350 degree oven about 10 minutes or until cheese starts to brown.
3 Serve with corn chips or crackers.
Yield: 4 cups
