Asparagus and Tomato Salad with Yogurt Dressing
10 oz. asparagus tips and tender stems, steamed just till tender
1 tomato, chopped
2 Tbsp. green onion, thinly sliced
3 Tbsp. non-fat plain yogurt
1 Tbp. grated Parmesan cheese
1 tsp. dijon mustard
10 Romaine lettuce leaves
1. In a medium bowl, combine the asparagus, tomatoes and onions.
Set aside.
2. In a small bowl, whisk together the yogurt, cheese and mustard.
3. Add into the vegetables and toss until well coated. To serve, line salad plates with lettuce leaves and then spoon the salad onto the top.
