Macadamia Nut Cream Pie

                                                          
                                                                            
Crust:                                                                     

1 3/4 cups graham cracker crumbs                                                  

1/2 cup sugar                                                                

5 tablespoons butter, melted                                                         

                                                                       

Cream all ingredients together and press firmly into a 

9 inch greased deep-dish pie pan. Bake at 350ºF for 15 minutes until light golden brown. Cool completely. 

                                                                            

 

Filling:                                                                   

3 cups milk                                                                   

1/3 cup cornstarch                                                           

1/8 teaspoon salt                                                              

3 large egg yolks                                                          

3/4 cup sugar                                                                

1 1/2 tablespoons vanilla extract                                                    

2 tablespoons butter

1 cup roasted macadamia nuts, chopped 

(Roast nuts in 350ºF oven for 8 minutes, let cool)                                       

                                                                            
Bring milk to a boil. In a bowl whisk cornstarch, sugar, salt and eggs together. Temper egg mixture with milk. Return to stove top and cook, scraping bottom of pot with spoon to prevent burning. Cook until it boils for 2 minutes. Turn off heat and stir in butter and vanilla. Stir in macadamia nuts. Pour filling into pie crust. Chill 3 to 4 hours.           

                                                                            

Whipped cream topping:                                                        

2 cups whipping cream                                                         

1/4 cup powder sugar                                                         

1/2 teaspoon vanilla extract.                                                     

                                                                            

Begin whipping cream with a hand mixer. When cream starts to form peaks, add powdered sugar and vanilla extract. Mix well to incorporate.

Top pie with whipped cream. Serve
