Blueberry Peach Cobbler
2 cups sliced peaches (4 peaches)
1 cup blueberries
1/4 cup sugar + 1/4 cup sugar
1 1/2 tbsp. corn starch
1/2 cup cold water
Topping:
1 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/2 stick margarine, softened
1 tsp. sugar
1/4 tsp. nutmeg
1 In medium pan, mix peaches, blueberries and 1/4 cup sugar and cook over medium heat.
2 Mix 1/4 cup sugar with corn starch and stir in cold water. Add to fruit mixture and cook until liquid boils, clears and thickens. Pour into a deep 2 quart casserole.
3 Stir together flour, baking powder and salt. Add milk and margarine to mixture and spoon over fruit.
4 Mix sugar and nutmeg and sprinkle on top. Bake at 350 degrees for 30 minutes.
