Coco-Nut Brownie Squares



Coco-Nut Topping:
1 1/2 cups sweetened flaked coconut
1 1/2 cups walnuts, chopped
1/2 cup packed light-brown sugar
1/4 tsp. salt
1/4 cup unsalted butter, melted

Brownie:
1 cup unsalted butter
2 cups granulated sugar
3/4 cup unsweetened cocoa
4 large eggs
2 tsp. vanilla
1 3/4 cups all-purpose flour
1/2 tsp. salt

1 Heat oven to 350 degrees. Line a 15 x 10-inch jelly-roll pan with foil. Coat foil with cooking spray
2 Topping: In a large bowl, combine coconut, walnuts, brown sugar, salt and melted butter until well mixed.
3 Brownie: In medium-size saucepan, melt butter over medium heat. Stir in sugar and cocoa. Remove from heat. With wooden spoon, beat in eggs, one at a time. Stir in vanilla, then four and salt. Pour brownie batter into prepared pan. Sprinkle topping evenly over batter.
4 Bake in 350 oven until golden and brownie is just set in center, 25-30 minutes. Let cool in pan on rack. Grab edges of foil to remove brownies from pan. Cut into 48 squares. Remove brownies from foil with spatula.

Yield: 48 squares.
