Slow Cooker Burritos



1 boneless chuck roast, about 2 lbs.
3 cups beef stock
1 onion, chopped
red pepper flakes
chopped cilantro
4-6 flour tortillas
salsa
shredded lettuce, sliced tomatoes

1. Place chopped onion in slow cooker, pressing it around to the sides. Add chuck roast and seasoning. Cover with boiling beef stock and cover pot; cook on high heat for about 5 1/2 hours.
2. Allow the meat to cool slightly. Pull it apart with two forks. Add to a bowl with salsa and toss until the meat is covered.
3. Serve with heated tortillas, shredded lettuce and tomatoes.

Yield: About 4 servings.
