Cassoulet



1 onion, peeled and chopped
1 pound baby carrots
15-ounce can white beans, drained
15-ounce can chopped tomatoes
1 pound mild turkey or chicken sausage
1 cup red wine or cooking wine
1 teaspoon chopped garlic (bottled is fine)
1 teaspoon crushed thyme
Salt and black pepper to taste
1 bay leaf

1. Place all ingredients together in the slow cooker. Cover and cook on low for 8 to 10 hours. Discard bay leaf before serving.
