Fish in Foil
1 pound white fish filet
2 pieces of tin foil, approx. 16" x 12"
cooking spray
1/4 cup chopped onion
1/4 cup chopped red or yellow pepper
2 tsp. chopped fresh dill or basil
olive oil
fresh lemon
1 Spray tin foil with cooking spray, place 8 oz. of fish on each piece of foil.
2 Sprinkle each fish with half of onion, peppers and herbs. Drizzle with olive oil, sqeeze of fresh lemon and salt and pepper.
3 Fold tin foil into packets, cook on medium heat 8-10 minutes for thin filets such as tilapia, longer for thicker pieces.
