Garlic Bread Fingers
1 large garlic clove, coarsely chopped
1/4 tsp. salt
5 tbsp. unsalted butter, softened
2 tbsp. minced, fresh flat-leaf parsley
2 tbsp. minced scallions
2 tbsp. minced pitted kalamata olives
2 tbsp. minced sun-dried tomatoes in oil, drained
12 slices firm white bread, lightly toasted with crusts removed
1 Place chopped garlic on clean work surface and sprinkle with salt. With back of fork, mash into a paste.
2 In a small bowl combine garlic paste, butter, parsley, scallions, olives and sun-dried tomatoes.
3 Heat Broiler. Evenly divide garlic and butter mixture among bread slices and spread. Place under broiler until bubbling. About 1 minute. Cut bread into thirds and serve hot.
