Grilled Chicken with Bourbon Barbecue Sauce



4-6 boneless, skinless chicken breasts, about 1/3 to 1/2 pound each
4-6 teaspoons Saltless Herb Mix for Poultry, recipe below
Bourbon Barbecue Sauce, recipe below

1 Lightly coat each side of chicken breasts with about 1/2 teaspoon of Saltless Herb Mix for Poultry. Gently massage into chicken. Let stand at least 1 hour at room temperature or preferably refrigerate, covered, overnight.
2 When ready for grilling, remove from refrigerator and let stand 1 hour.
3 For gas grills: Heat grill to medium heat, grill chicken breasts 12-16 minutes directly over flames or until an internal temperature of 160ºF, turning at least once. Baste with barbecue sauce after 8-10 minutes.
For charcoal grills: Heat grill to medium-medium high heat, grill chicken breasts 12-16 minutes directly over flames or until an internal temperature of 160ºF, turning at least once. Baste with barbecue sauce after 8-10 minutes.

Yield: 4-6 portions


Saltless Herb Mix for Poultry

3 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon dried thyme
1 tablespoon dried sage
1/2 tablespoon dried oregano
1/2 tablespoon freshly ground black pepper
1/2 teaspoon ground savory

1 Combine well. Store covered.

Yield: 1/3 cup

Bourbon Barbecue Sauce

1 cup Heinz ketchup
1/3 cup bourbon
1/3 cup red wine vinegar
1/4 cup chili sauce
1/4 cup molasses
1/4 cup honey
1 tablespoon Worcestershire sauce
1 tablespoon fresh lemon juice
1 tablespoon Creole mustard
2 teaspoons soy sauce
1/2 teaspoon onion powder
2-3 garlic cloves, crushed


1 Whisk or stir all ingredients together well. Let stand several hours, preferably overnight.

Yield: Approx. 2 1/2 cups
