Turkey Tetrazzini
10 oz. spaghetti
2 tablespoons butter
8 oz. mushrooms, sliced
2 stalks celery, thinly sliced
5 scallions, chopped
4 tablespoons flour
1 cup chicken stock
1 cup cream
3 cups diced, cooked turkey meat
freshly-grated Parmesan cheese
1/4 cup slivered almonds
1. Preheat oven to 350 degrees.
2. Cook spaghetti al dente. Melt butter and saute mushrooms, celery, and scallions until softened. Stir in flour and add chicken stock. Continue stirring until liquid is smooth and slightly thickened. Add cream and allow to thicken before stirring in the turkey.
3. Combine turkey and sauce with cooked spaghetti and transfer to greased ovenproof dish. Top with grated Parmesan cheese and slivered almonds. Bake for about 30 minutes until brown on top.
