Rolled Beef Enchiladas

(Enchiladas de res Enrolladas)

 

Ingredients:

 

1 lb. lean ground beef

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon ground cumin

1/4 teaspoon ground cumin

4-5 green onions, chopped (about 1/2 cup)

1 1/2 cups shredded cheese

1 cup sour cream

8-8 inch soft tortillas (preferably wheat)

 

Sauce:

1-10 oz. can ORTEGA Enchilada Sauce

 

Topping:

2/3 cup shredded cheese

 

Garnish:

Chopped green onion tops

Chopped bell peppers

More Enchilada Sauce

 

Preheat oven to 350°F.  Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add chili powder, salt, pepper, cumin and coriander. Stir to mix well, Add cheese, green onions and sour cream, stir until well combined.

Place 1/4 cup or so of beef mixture in the center of each tortilla, roll up. Place each roll seam side down in a lightly greased 9 x 13 baking dish.

Top generously with Enchilada Sauce and sprinkle with cheese.

Bake @ 350°F for 20-25 minutes until cooked thoroughly.  Remove from oven; serve with more sauce and garnish with onions and peppers.

Serve hot!

Yield: 8 enchiladas.
