Maple-Chipotle BBQ Glazed Pork Loin
2 tablespoons soy bean oil (optional)
4 center-cut pork loins, preferably 1-inch thick Kosher salt and pepper to taste
1 tablespoon chipotle peppers in adobo sauce, chopped
2 tablespoons maple syrup
1 cup barbecue sauce (any good tomato-based kind will work)
1. Sprinkle salt and pepper on both sides of each pork loin. Grill it outside or in a pan over high heat. If using a pan, add the oil. Place pork loins in hot pan for 5 minutes.
2. Meanwhile, mix together the chipotles, maple syrup and barbecue sauce. Whisk by hand until smooth.
3. Flip the pork loins and continue cooking on the other side for 5 more minutes. Cooking time may vary, depending on the pork's thickness.
4. With a brush or serving spoon, spread the glaze on top of the pork. Flip over and glaze the other side. Cook 3 more minutes, to medium-well (well-done will dry out the meat).
