Slow Grilled Boneless Pork with Maple Barbecue Sauce
2 lbs. boneless pork loin
3-4 teaspoons, your favorite pork rub/seasoning
Maple Barbecue Sauce
1 Lightly coat all sides of pork with seasonings. Gently massage into pork. Let stand at least 1 hour at room temperature or preferably refrigerate, covered, overnight.
2 When ready for grilling, remove from refrigerator and let stand 1 hour.
3 For gas grills: Heat grill to medium heat, grill pork about 1 hour over indirect heat or until an internal temperature of 160ºF is reached, turning at least once. Start basting with Maple Barbecue Sauce after 50 minutes.
For charcoal grills: Heat grill to medium high heat, grill pork about 1 hour over indirect heat or until an internal temperature of 160ºF is reached, turning at least once. Start basting with Maple Barbecue Sauce after 50 minutes.
Maple Barbecue Sauce
1 1/2 cups Maple syrup
1/4 cup chili sauce
2 tablespoons cider vinegar
2 tablespoons finely chopped onion
2 teaspoons finely chopped ginger
1/2 tablespoon soy sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 tablespoon pepper
1 Combine and whisk well. Let stand a few hours, preferably overnight.
Yield: Approx. 2 cups
