Wayne-O's Buffalo Bill's Tailgate Chili



1 lb. ground chuck
1 lb. ground round
2 large onions, chopped
1 large green pepper, chopped
2 cans red kidney beans
2 28 oz. cans crushed tomatoes
1/2 tomato can of water
1-2 tsp. chili powder
1 tsp. chopped garlic
1 tsp. caraway seed


1. Crumble up ground chuck and ground round together and fry over medium heat in the bottom of a large sauce pan. When the meat is browned, add the chopped onion and pepper and continue to cook over low heat, stirring often until onions and peppers are tender
2. Add tomatoes, kidney beans, water, garlic, chili powder and caraway seed. After adding all the ingredients, simmer for 1/2 hour over medium heat stirring frequently.
3. Top with shredded cheese and hot sauce if you like when served.
Two Tips: Cook slowly over medium heat. High heat will cause the meat, which tends to stay on the botton, to burn and stick to the pan which ruins the flavor. Don't leave out the caraway seed. Mother says this is the spice that gives the chili its unique flavor.
